What is Farro?

Farro is a hulled ancient wheat and refers to three different species: Triticum dicoccum, Triticum monococcum and Triticum spelta; has always been appreciated for being a strong plant, easy to grow in dry rocky land without input, it is leading against infest, and strong thanks to the hull that protects the grain after the threshing. Farro is an extremely nutritious cereal: it’s an excellent source of protein, fibre and minerals, vitamins, and nutritive elements; it is easy to digest and low glycaemic, it is precious for balanced healthy diet.
